Legend has it that our cave, carved from a Spring Mountain hillside, was originally an abandoned silver mine.
Our cave’s environment is naturally cool — an essential aspect of wine storage once a wine has fermented. Humidity, on the other hand, helps slow the evaporation of wine through a barrel’s porous surface, reducing the amount of wine lost. Each month, our winemaking team tops each barrel to replace any wine that has evaporated. This process of evaporation was vexing to ancient winemakers who didn’t understand the science behind the monthly loss. But they did come up with a beautiful phrase for it, saying that “the angels had taken their share.” We don’t begrudge the angels their share!
